Comments from the Great Taste award judges who were tasting our sauces blinded to what they were for or how to use them:
• Kickin' Key Lime Toad Sweat Dessert Hot Sauce: On the palate, it starts extremely syrupy sweet, then the lime and unmistakable habanero become the stars of the show and co-exist quite happily. The sweetness is never overpowered and the chilli heat lingers a long time at a comfortable level. This is a most unusual product and we applaud the originality. We wonder how versatile it would be, however, we can see it with vanilla ice cream. Maybe it would give a citrus-based dessert, eg., a posset, a conversation-starting twist. Could you even add a splash to the sauce for a sticky toffee pudding, or
incorporate it into cocktails?
This fascinating sauce has the aroma of chocolate – or even chocolate and raspberry! When it hits the tongue it has a lovely sweetness and then bang! – it explodes and whacks your taste buds with that hit of lime and then that habanero. This made us smile, it made us laugh and it would be good on ice cream.
• Zippin' Lemon Toad Sweat Dessert Hot Sauce: This sounds exciting and smells really interesting. It has a heady, lemony aroma with, perhaps it is vanilla? The consistency would be great to pour over ice cream or even as a sweet marinade. On tasting there is a fresh acidity of the lemon, mingled with a level of sweetness and, we think, vanilla, and maybe a sweet spice too? The heat gently grows on the palate and lingers long. It is clever, exciting and would be very useful in the kitchen.
The fact that it is brewed has obviously intensified the flavour too. This is the most exciting thing we have had this morning and have not come across a product quite like it. We think this is so good it is worthy of two stars. One judge even suggested adding a splash to marmalade and using it as a filling in a sponge! Alternatively, it would make a great mocktail with soda water!
